We talked to Charissa Leong, Olam Cocoa’s head of Sales for Asia on the products and concepts they have been introducing to beverage, bakery, and confectionery manufacturers. An interesting trend these days is what she calls fusion food, examples of which are salted egg chocolate and peanut butter cacao. If these flavour pairings have stretched your imagination as to what other flavours can go together, well there are many out there that easily pair with a versatile ingredient like cocoa. Not only that cocoa has other functions in food and beverage.
